Roasted Italian Potatoes

Super quick and easy to make, these can be your showpiece side dish with very little effort. Most of your ingredients will be in your cupboard, and a perfect side to any midweek meal.

Preparation: 15 minutes

Cooking: 30 minutes


  • 1.5KG white potatoes, peeled and chopped
  • Salt and pepper
  • 3 tbsp Italian seasoning
  • Olive oil FryLight
  • Garlic granules or fresh garlic
  • Chilli flakes


To a medium pot, add water, washed potatoes, bring to boil and cook until just soft. Drain and set aside. Using the colander they were drained in, slightly squash the potatoes with the colander to create a slight fluffy shape.

Add fluffy potatoes to a baking tray, FryLight, Italian seasoning, garlic, salt and pepper and put in the middle of a preheated oven at gas mark four.

Cook until deliciously crisp and golden and serve alongside your main.
