Chicken is delicious you can do so much and whip up something so flavoursome with so many different ingredients. I had some chicken breasts I needed to use and the regional plan was to make a few chicken breasts, have one myself with some fries and salad and that would be it.
Sam could have the rest for lunch another day except that didn’t happen and no word of a lie, I ate all three chicken breasts because DAMN that tasted so good. But obviously what came with that was a lot of feeling sorry for myself for now having what resembled a massive food baby and needing a months worth of sleep to cool off. That doesn’t work when you have an active toddler and work to get on with. I don’t regret it but next time I’ll limit myself. For sure!
Preparation: 5 minutes
Cooking: 35 minutes
Ingredients:
- 3-4 chicken breasts
- 2 tsp Chilli flakes
- 2 tsp garlic granules
- 3 tsp cayenne pepper
- 3 tsp paprika
- 1 tbsp oil
- Salt and pepper to season
- 2 Drop of lemon juice
Method:
Heat your oven to 180 fan/gas mark 6.
Season the chicken breasts well. Add the oil to a wok, heat and add all your spices and garlic. Add the chicken breasts and cook for 5 minutes until the meat is sealed, slightly browning in colour and giving a glorious smell.
Remove the chicken from the wok, add to a parchment lined baking tray, sprinkle the lemon juice and add a few more chilli flakes and bake for 25 minutes or until cooked through.
Serve with a salad and French fries.
