Spicy Chinese Pork Stir Fry

I have a newfound love for pork mince at the moment. I can do so much with it. The other week it was pork and courgette meatballs this week it’s all about how easy it can sort out a quick and simple dinner packed with veggies and flavour. This dish was a last minute dish using some of the ingredients from last Thursdays veg box. Using yellow and green courgettes, peppers, spring onions and carrot with a little spice, it makes for a yum dinner in less than 15 minutes.

Preparation: 5 minutes

Ingredients:

  • 500g lean pork mince
  • 1/2 yellow courgette, chopped
  • 1/2 green courgette, chopped
  • 1 green pepper, chopped into strips
  • 4 spring onions, diced
  • 1 white onion diced
  • 2 tbsp sesame oil
  • 2 tbsp soy sauce
  • 2 tbsp garlic granules
  • 1 small carrot, thinly sliced
  • 1 tsp ginger
  • 50ml hoisin sauce
  • 10ml cold water
  • 1 tbsp chilli flakes
  • 300g Straight to wok medium noodles
  • Salt and pepper to season

Method:

In a large wok, add the sesame oil, soy sauce, all the veg and pork mince and stir. Cook for 2-3 minutes on a medium heat.

Add chilli flakes, cook for a further few minutes, then add the hoisin sauce and cold water and stir. Properly coat the veg and meat and cook for 5-7 minutes, careful not to burn.

Add noodles, cook for a few minutes, season then serve.
